Ingredients:

  • 3 ounces Phantom Wines Chardonnay
  • 1/2 – 3/4 oz maple syrup
  • 1/2 oz lemon juice
  • 1/2 apple juice
  • 1/8 tsp or pinch of ground cinnamon
  • 1 oz ginger beer
  • Absinthe spritz
  • Pomegranate arils, cinnamon stick, star anise for garnish

Description:

As the seasons turn and the hours of dark grow, the stars of the night sky shine brighter to illuminate our way. Starlight Spritz is a toast to the change of seasons and the celestial guidance of these constellations. Grounding maple notes, bright citrus, warming apple and cinnamon pair perfectly with the creamy pear, apple and oak essence of Phantom Wines Chardonnay. Topped with a light ginger beer and a mist of absinthe, Starlight Spritz is a unique twist on traditional harvest flavors that everyone at your table will enjoy. Garnished with natural star-shapes and an optional smoked cinnamon stick to set intentions, this is the perfect sip to enjoy while gazing in wonder at the night sky or pre-batching in a pitcher for harvest holidays.

Directions:

1. In your glass, pour Chardonnay, maple syrup, fresh lemon juice, apple juice, and a pinch of ground cinnamon.

2. Add ice and stir.

3. Top with ginger beer, or substitute with sparkling cider for a sweeter rendition. Add more maple to taste, if needed.

4. Top with a light mist of absinthe to bring out the oak of the chardonnay.

5. Garnish with pomegranate arils and a cinnamon stick. For an added celestial touch, you can use horizontally-sliced apples (to feature their inner star) and star anise.

6. Stir with the cinnamon stick to set intentions. If desired, you can lightly smoke the cinnamon stick (just be mindful of any open flames, as absinthe is high proof).

Recipe Notes

If you prefer an absinthe-free version, you can substitute the ginger beer and apple juice with 1.5-2 ounces sparkling cider for a sweeter rendition.
